  • 1 pound chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 cup mushrooms, sliced
  • 1 cup bell pepper, sliced
  • 2 cups spinach
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 2 green onions, chopped

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chicken and cook until browned.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the coconut milk and red curry paste, stirring until well combined.
  5. Add mushrooms and bell pepper, cooking until tender.
  6. Stir in the spinach, lime juice, and fish sauce. Cook for another 2 minutes.
  7. Garnish with green onions before serving.
