30-Minute Seared Salmon with Lemon Orzo

A quick and delicious recipe for seared salmon served with lemon orzo, perfect for a weeknight dinner.

Ingredients

  • 2 fillets salmon
  • 1 cup orzo pasta
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 tablespoon fresh dill (chopped)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season salmon fillets with salt and pepper.
  3. Cook salmon skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
  4. Meanwhile, bring vegetable broth to a boil and cook orzo for 8-10 minutes until al dente.
  5. Drain orzo and mix in lemon juice, zest, and fresh dill.
  6. Serve the salmon on a bed of lemon orzo.

Notes

  • For extra flavor, add garlic to the orzo while cooking.
  • Substitute salmon with any firm fish of your choice.
