30-Minute Seared Salmon with Lemon Orzo

A quick and easy recipe for seared salmon accompanied by lemon orzo, perfect for weeknight dinners.

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 cups spinach
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Start by cooking the orzo according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the salmon with salt and pepper, then place it skin-side down in the skillet.
  4. Cook for about 4-5 minutes, then flip the salmon and cook for another 3-4 minutes until golden brown and cooked through.
  5. Add garlic to the skillet and sauté for 1 minute.
  6. Stir in the spinach and lemon juice, cooking until wilted.
  7. Mix in the cooked orzo and lemon zest, tossing to combine.
  8. Serve the salmon with the lemon orzo on the side.
