  • 2 cups grated zucchini
  • 1 cup shredded cheese
  • 1/2 cup cooked and crumbled turkey bacon
  • 2 large eggs
  • 1/4 cup olive oil
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the grated zucchini, cheese, turkey bacon, eggs, and olive oil.
  3. In another bowl, whisk together the flour, baking powder, salt, and black pepper.
  4. Gradually add the dry ingredients to the zucchini mixture, stirring until just combined.
  5. Fill the muffin cups about 2/3 full and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let the muffins cool for a few minutes before transferring to a wire rack.

Notes

  • For a spicier kick, add some red pepper flakes to the batter.
