Aromatic Ginger Chicken Noodle Soup with Jammy Quail Eggs

A warm and flavorful soup that combines the zest of ginger with tender chicken and rich quail eggs.

  • 2 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 4 ounces rice noodles
  • 6 quail eggs
  • 2 green onions, chopped
  • 2 teaspoons soy sauce
  • Salt to taste
  • 1 tablespoon sesame oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine chicken broth, minced ginger, and garlic over medium heat.
  2. Add chicken thighs and simmer until cooked through, about 20 minutes.
  3. Remove chicken, shred it, and return it to the pot.
  4. Cook the rice noodles according to package instructions and add them to the soup.
  5. In a separate pot, boil quail eggs for 4 minutes, then plunge into ice water before peeling.
  6. Add soy sauce, sesame oil, and season with salt.
  7. Serve the soup hot, garnished with green onions, cilantro, and halved quail eggs.

Notes

  • Adjust ginger based on your preference for spice.
  • For a heartier soup, add vegetables like carrots or bok choy.
