  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tablespoon lime juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add beef and brown on all sides.
  4. Soak guajillo and ancho chiles in hot water until soft, then blend with spices and broth.
  5. Pour the blended mixture over the beef, add bay leaves, and simmer for 2-3 hours.
  6. Shred the beef and serve with broth.
