- 4 large flour tortillas
- 8 ounces turkey bacon, cooked and chopped
- 8 ounces chicken ham, diced
- 2 cups shredded cheese (cheddar or your preference)
- 1 bell pepper, diced
- 1 onion, diced
- 4 large eggs
- 1 tablespoon olive oil
- In a skillet, heat olive oil over medium heat. Add onion and bell pepper, and sauté until soft.
- In a bowl, whisk the eggs and pour them into the skillet. Stir until scrambled and cooked through.
- Add the cooked turkey bacon and chicken ham to the skillet, mix well.
- On a separate skillet, place one tortilla, sprinkle with cheese, then add the egg mixture and top with more cheese. Place another tortilla on top.
- Cook until the bottom is golden, then carefully flip and cook until the other side is golden and the cheese is melted.
- Repeat for remaining tortillas and filling.
- Cut into wedges and serve warm.
