Breakfast Quesadillas

Start your day right with these delicious and easy breakfast quesadillas filled with turkey bacon and chicken ham.

Ingredients

  • 4 large flour tortillas
  • 8 ounces turkey bacon, cooked and chopped
  • 8 ounces chicken ham, diced
  • 2 cups shredded cheese (cheddar or your preference)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 4 large eggs
  • 1 tablespoon olive oil

Instructions

  1. In a skillet, heat olive oil over medium heat. Add onion and bell pepper, and sauté until soft.
  2. In a bowl, whisk the eggs and pour them into the skillet. Stir until scrambled and cooked through.
  3. Add the cooked turkey bacon and chicken ham to the skillet, mix well.
  4. On a separate skillet, place one tortilla, sprinkle with cheese, then add the egg mixture and top with more cheese. Place another tortilla on top.
  5. Cook until the bottom is golden, then carefully flip and cook until the other side is golden and the cheese is melted.
  6. Repeat for remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • Feel free to customize the fillings with your favorite vegetables.
  • These quesadillas are great for meal prep and can be frozen for later use.
