Cajun Chicken Orzo

  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 cup spinach, fresh
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with Cajun seasoning. Cook until browned.
  3. Add onion, bell pepper, and garlic, sauté until softened.
  4. Stir in the orzo and chicken broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for about 10 minutes until orzo is cooked.
  6. Stir in tomatoes and spinach until wilted. Season with salt and pepper.

Notes
