- 1 cup grated carrots
- 1/2 cup raisins
- 1 cup cottage cheese
- 1/4 cup honey
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, combine the grated carrots, raisins, cottage cheese, and honey.
- In another bowl, whisk together the flours, baking powder, baking soda, cinnamon, and salt.
