  • 1/2 cup raisins
  • 1 cup cottage cheese
  • 1/4 cup honey
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, combine the grated carrots, raisins, cottage cheese, and honey.
  3. In another bowl, whisk together the flours, baking powder, baking soda, cinnamon, and salt.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fill the muffin cups 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

  • For a sweeter muffin, add more honey or sugar.
