  • 3 cups grated carrots
  • 16 ounces cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. Add oil and eggs, mix until well combined.
  4. Fold in grated carrots and walnuts.
  5. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  6. Pour half of the cake batter into a greased cake pan, then layer with cream cheese mixture, followed by the remaining batter.
