Cauliflower and Coconut Chickpea Curry

  • 1 head cauliflower
  • 1 can coconut milk
  • 1 can chickpeas
  • 1 onion
  • 2 cloves garlic
  • 1 inch ginger
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon olive oil
  • salt to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Finely chop the onion, garlic, and ginger, and add to the pan. Sauté until onion is translucent.
  3. Add in the curry powder and turmeric, stirring for another minute until fragrant.
  4. Chop the cauliflower into florets and add to the pan, coating it with the spices.
  5. Pour in the coconut milk and chickpeas. Bring to a boil, then reduce heat to simmer.
  6. Cover and cook for about 15-20 minutes or until cauliflower is tender.
  7. Season with salt to taste before serving.
