Cheesy Hamburger Rice Casserole

A deliciously cheesy and hearty casserole combining ground beef and rice for a comfort food classic.

  • 1 pound ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 can diced tomatoes (15 oz)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen mixed vegetables

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add rice, beef broth, diced tomatoes, garlic powder, onion powder, salt, and pepper. Stir to combine.
  4. Bring to a boil, then reduce heat and cover. Cook for about 20 minutes or until rice is tender.
  5. Stir in the mixed vegetables and half of the cheddar cheese.
  6. Transfer to a baking dish and top with remaining cheese.
  7. Bake for 15-20 minutes until cheese is melted and bubbly.
  8. Let cool for a few minutes before serving.

  • Feel free to add different vegetables or spices to customize the dish.
  • For a spicier version, consider adding jalapeños or pepper jack cheese.
