- 1 pound ground beef
- 1 cup uncooked rice
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1 can diced tomatoes (15 oz)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen mixed vegetables
- Preheat oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add rice, beef broth, diced tomatoes, garlic powder, onion powder, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and cover. Cook for about 20 minutes or until rice is tender.
- Stir in the mixed vegetables and half of the cheddar cheese.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 15-20 minutes until cheese is melted and bubbly.
- Let cool for a few minutes before serving.
