1 pound chicken breast, cooked and shredded
4 slices turkey bacon, diced
1 cup carrots, sliced
1 cup celery, diced
1 onion, chopped
4 cups chicken broth
1 teaspoon dried thyme
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
2 tablespoons butter, melted
1 cup milk
Instructions
In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
Add onions, carrots, and celery to the pot. Cook until softened.
Stir in chicken broth and shredded chicken. Bring to a boil.
In a separate bowl, mix flour, baking powder, and salt. Stir in melted butter and milk until well combined.
Drop spoonfuls of the dumpling mixture into the boiling soup. Cover and reduce heat. Cook for about 15 minutes.
Finally, stir in cooked turkey bacon and thyme. Serve hot.
Notes
For a healthier version, you can substitute half the flour with whole wheat flour.
