Chicken and Potatoes with Dijon Cream Sauce

  • 4 chicken thighs
  • 2 cups baby potatoes
  • 1 tablespoon Dijon mustard
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add onion and garlic; sauté until softened.
  4. Season chicken with salt and pepper and add to the skillet, browning each side.
  5. Stir in Dijon mustard, then pour in heavy cream and add thyme.
  6. Add baby potatoes to the skillet, stirring to coat them.
  7. Cover the skillet and transfer to the oven; bake for 25-30 minutes.
  8. Check that potatoes are tender and chicken is cooked through.
  9. Serve warm and enjoy!

  • For added flavor, marinate chicken in Dijon mustard overnight.
