  • 1 pound boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the chicken breasts and season with salt, pepper, garlic powder, and Italian seasoning. Cook until the chicken is golden brown and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest before slicing.
  5. In the same skillet, add the sun-dried tomatoes and heavy cream. Stir well and bring to a simmer.
  6. Add the cooked pasta and sliced chicken to the skillet. Toss to combine.
  7. Stir in the grated Parmesan cheese until melted and creamy.
  8. Serve hot, garnished with additional Parmesan if desired.
