Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with half of the enchilada sauce.
  3. Fill each tortilla with the chicken mixture, roll them up, and place in a baking dish.
  4. Pour the remaining enchilada sauce over the filled tortillas and top with cheese and onions.
  5. Bake for 20-25 minutes until heated through and cheese is bubbly.

Notes

  • Serve with sour cream and guacamole for added flavor.
