  • 2 cups diced carrots
  • 2 cups diced celery
  • 4 cups chicken broth
  • 1 cup frozen peas
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onions, carrots, and celery; sauté until softened.
  3. Add the chicken thighs and cook until browned.
  4. Pour in the chicken broth, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 30 minutes.
