Chicken Tortilla Soup Recipe

A delicious and easy-to-make Chicken Tortilla Soup that is perfect for family nights.

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup tortilla strips
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic; sauté until soft.
  2. Add the chicken breasts and cook until browned.
  3. Pour in chicken broth and add the diced tomatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it, then return it to the pot.
  6. Serve hot, topped with tortilla strips, cheese, and cilantro.

Notes

  • For a spicier soup, add jalapeños or hot sauce.
  • Can be prepared in advance and reheated for easy meal prep.
