Chipotle Ranch Grilled Chicken Burrito

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup Chipotle ranch dressing
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1 cup shredded cheese
  • 4 large flour tortillas

Instructions

  1. In a large bowl, combine shredded chicken and Chipotle ranch dressing, mixing well.
  2. Lay out the flour tortillas on a flat surface.
  3. In the center of each tortilla, layer the chicken mixture, rice, black beans, corn, avocado, and cheese.
  4. Fold the sides of the tortilla over the filling, then roll it tightly from the bottom.
  5. Heat a grill or skillet over medium heat and place the burritos seam-side down. Cook until golden brown on all sides.
  6. Slice in half and serve warm.

Notes

  • For extra flavor, marinate the chicken in the Chipotle ranch dressing before cooking.
  • Serve with additional Chipotle ranch dressing on the side.
