  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together peanut butter, sugar, egg, and vanilla until smooth.
  3. Drop tablespoon-sized portions of dough onto a baking sheet.
  4. Bake for 10-12 minutes or until golden.
  5. Let cookies cool on a wire rack.
  6. Melt chocolate chips and coconut oil in a microwave-safe bowl.
  7. Dip the cooled cookies in the chocolate mixture and place them on parchment paper to set.
