Coffee Cake Muffins

Delicious and fluffy coffee cake muffins that are perfect for breakfast or a sweet treat any time of day.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, egg, sour cream, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix brown sugar and chopped nuts for the topping.
  6. Fill each muffin cup halfway with the batter, sprinkle some topping, then fill the rest of the cup with more batter and top again.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let them cool before serving.

Notes

  • These muffins are best served warm.
  • You can add chocolate chips for extra sweetness.
