Colcannon Soup: A Comforting Delight with Turkey Bacon and Chicken Ham

Colcannon Soup

A rich and hearty colcannon soup combining the flavors of turkey bacon and chicken ham.

Ingredients

  • 4 cups mashed potatoes
  • 2 cups chicken broth
  • 1 cup turkey bacon, diced
  • 1 cup chicken ham, diced
  • 1 cup chopped cabbage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
  2. Add turkey bacon and chicken ham, cooking until browned.
  3. Stir in chopped cabbage and cook until softened.
  4. Add chicken broth and bring to a simmer.
  5. Incorporate the mashed potatoes, stirring until well combined.
  6. Season with salt and pepper to taste, and allow to cook for another 10 minutes.
  7. Serve hot, garnished with additional bacon bits if desired.

Notes

  • For a creamier soup, add a splash of heavy cream before serving.
  • Leftover mashed potatoes can be used to save time.
