Colcannon Soup

Colcannon soup is a delicious and hearty dish that combines the flavors of creamy potatoes, savory turkey bacon, and chicken ham, perfect for warming you up on a cold day.

  • 4 cups potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, chopped
  • 1 medium onion, chopped
  • 2 cups chicken broth
  • 1 cup milk
  • 1/4 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions, sliced

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the chopped onion and cook until translucent.
  3. Add the diced potatoes, chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in the milk and butter, cooking until heated through.
  5. Use an immersion blender to puree the soup until smooth or leave it chunky, depending on your preference.
  6. Stir in the chicken ham and cooked turkey bacon, heating until everything is warmed through.
  7. Serve hot, garnished with green onions.
