  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the cottage cheese, crushed pineapple, and shredded coconut.
  3. In another bowl, combine the flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk the eggs, vegetable oil, and vanilla extract.
  5. Mix wet ingredients into the dry ingredients until just combined, then fold in the cottage cheese mixture.
  6. Fill muffin cups three-quarters full and bake for 20-25 minutes or until golden brown.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack.
