  • 100 grams Parmigiano-Reggiano cheese, grated
  • 100 grams Pecorino Romano cheese, grated
  • 1 tablespoon black pepper, freshly cracked
  • 1 teaspoon chili flakes
  • 2 tablespoons fresh thyme, chopped
  • 4 tablespoons butter
  • Salt to taste
  • Water for boiling

Instructions

  1. Boil a large pot of salted water and cook the spaghetti according to package directions.
  2. In a large skillet, melt the butter over medium heat. Add the black pepper and chili flakes, stirring until fragrant.
  3. Reserve some pasta water, then drain the spaghetti.
  4. Add the spaghetti to the skillet and toss to coat with the butter mixture.
  5. Gradually mix in the cheeses, adding reserved pasta water as needed to create a creamy sauce.
  6. Stir in the fresh thyme and adjust seasoning with salt.
  7. Serve immediately, garnished with extra cheese and chili flakes if desired.
