  • 1 can (15 oz) tomato sauce
  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until soft.
  2. Stir in the garlic and cook for 1 minute until fragrant.
  3. Add the shredded chicken, tomato sauce, enchilada sauce, and chicken broth.
  4. Bring to a simmer and then add corn, black beans, cumin, and chili powder.
  5. Simmer for 20 minutes, stirring occasionally.
  6. Stir in the heavy cream and cheese until melted and combined.
  7. Remove from heat and garnish with fresh cilantro.
