  • 1 pound chicken breast, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 cup corn, frozen
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 cup tortilla strips

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in onion, garlic, and bell peppers and sauté until tender.
  4. Pour in the chicken broth and add diced tomatoes and corn.
  5. Season with cumin and chili powder. Let it simmer for 15 minutes.
  6. Stir in heavy cream and cheese until melted and combined.
  7. Serve hot, topped with tortilla strips.
