Creamy Herb Chicken with Mashed Potatoes & Glazed Carrots

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 4 cups mashed potatoes
  • 3 cups carrots, sliced
  • 1 tablespoon butter
  • 2 tablespoons brown sugar

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken breasts and cook until golden brown on both sides.
  2. In a separate bowl, combine heavy cream, thyme, and rosemary. Pour over chicken and simmer until cooked through.
  3. Meanwhile, prepare mashed potatoes according to your favorite recipe.
  4. In another pan, melt butter, add carrots and brown sugar, and sauté until the carrots are tender.
  5. Serve chicken with mashed potatoes and glazed carrots on the side.

Notes

  • Feel free to use fresh herbs for a more vibrant flavor.
  • Adjust the consistency of the cream sauce to your liking by adding more or less cream.
