Creamy Roasted Tomato Soup

A delicious and comforting creamy roasted tomato soup made with turkey bacon, perfect for cozy nights.

Ingredients

  • 2 pounds ripe tomatoes
  • 4 strips turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon dried basil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the tomatoes in half and place them on a baking sheet, cut side up.
  3. Drizzle with olive oil, sprinkling with salt, pepper, and dried basil.
  4. Roast for 30 minutes or until caramelized.
  5. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  6. Add onion and garlic to the pot, and sauté until translucent.
  7. Add the roasted tomatoes and chicken broth, bring to a boil, then reduce to a simmer.
  8. Stir in heavy cream and crumbled bacon, and blend until smooth.
  9. Serve warm and enjoy!

  • Adjust the creaminess by adding more or less cream to your taste.
