Creamy Street Corn Pasta Salad

A creamy and flavorful pasta salad featuring sweet corn and crispy turkey bacon.

  • 1 cup sweet corn
  • 4 slices turkey bacon
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste
  • 2 tablespoons chopped cilantro

Instructions

  1. Cook pasta according to package instructions, then drain and let cool.
  2. In a skillet, cook turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine mayonnaise, sour cream, lime juice, garlic powder, onion powder, salt, and pepper.
  4. Add cooled pasta, corn, chopped turkey bacon, and cilantro to the bowl; mix well to combine.
  5. Chill the pasta salad in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, add diced bell peppers.
