Crock Pot Chicken Tortilla Soup

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can diced tomatoes with green chilies
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 bell pepper, diced
  • 1 lime, juiced
  • Salt and pepper to taste
  • Tortilla strips for topping
  • Shredded cheese for topping

Instructions

  1. Place the chicken breasts in the bottom of the Crock Pot.
  2. Add the chicken broth, canned tomatoes, black beans, corn, onion, garlic, cumin, chili powder, and bell pepper.
  3. Stir to combine and season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Before serving, shred the chicken with two forks and stir in lime juice.
  6. Serve hot, topped with tortilla strips and shredded cheese.

Notes

  • For extra heat, add jalapeños to the soup.
  • Can be made a day ahead and tastes even better the next day.
