Crock Pot Crack Potato Soup

  • 2 pounds potatoes, peeled and diced
  • 1 cup diced onion
  • 4 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions

Instructions

  1. Add the diced potatoes, onion, and chicken broth to the Crock Pot.
  2. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  3. Once the potatoes are tender, mash some of them for a thicker consistency.
  4. Stir in the sour cream, cheddar cheese, bacon, garlic powder, salt, and pepper.
  5. Cook for an additional 30 minutes until heated through.
