Crockpot Chicken Parmesan Soup

A comforting and delicious soup made easily in your crockpot.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1 teaspoon crushed red pepper flakes
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add diced tomatoes, chicken broth, garlic, salt, and pepper to the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, shred the chicken in the pot.
  5. Add heavy cream, spinach, and Parmesan cheese. Stir until heated through.

Notes

  • Serve with crusty bread for dipping.
  • Leftovers can be stored in the refrigerator for up to 3 days.
