Crockpot Chicken Tortilla Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed

  • 1 can diced tomatoes
  • 4 cups chicken broth

  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lime, juiced
  • 1/2 cup fresh cilantro, chopped

Instructions

  1. Place all ingredients except for lime juice and cilantro in the crockpot.
  2. Cover and cook on low for 6-8 hours or high for 4-5 hours.
  3. Once cooked, shred the chicken with two forks.
  4. Add lime juice and cilantro, stir to combine.
  5. Serve hot with tortilla chips or toppings of your choice.
