- 2 cups shredded chicken
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt to taste
- 1 cup tortilla strips
- 1 avocado, diced
- Combine all ingredients except for tortilla strips and avocado in the crockpot.
- Stir well to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir in tortilla strips and top with diced avocado.
Notes
- Feel free to add more spices for extra heat.
- This soup can also be topped with cheese and sour cream.
