Crockpot Chicken Tortilla Soup

A comforting and easy-to-make Crockpot Chicken Tortilla Soup that is perfect for busy weeknights.

Ingredients

  • 2 cups shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 1 cup tortilla strips
  • 1 avocado, diced

Instructions

  1. Combine all ingredients except for tortilla strips and avocado in the crockpot.
  2. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Before serving, stir in tortilla strips and top with diced avocado.

Notes

  • Feel free to add more spices for extra heat.
  • This soup can also be topped with cheese and sour cream.
