Crockpot Creamy Chicken Wild Rice Soup

  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cups heavy cream
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the wild rice, chicken broth, carrots, celery, onion, garlic, thyme, salt, and pepper.
  3. Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
  4. Remove the chicken, shred it, and return it to the crockpot.
  5. Stir in the heavy cream and lemon juice.
  6. Cook on low for an additional 30 minutes until thickened.
