Crockpot Garlic Parmesan Chicken Pasta

  • 1 pound chicken breast
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups penne pasta
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 2 cups chicken broth

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. In a bowl, mix the heavy cream, Parmesan cheese, garlic, salt, pepper, and Italian herbs.
  3. Pour the mixture over the chicken in the crockpot.
  4. Add the chicken broth and stir to combine.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. During the last 30 minutes of cooking, add the penne pasta to the crockpot.
  7. Stir well and allow to cook until the pasta is al dente.
  8. Shred the chicken in the crockpot and serve warm.

Notes

  • Adjust seasoning to taste before serving.
  • Add additional broth if the dish becomes too thick.
