Crockpot Lemon Chicken Soup

A comforting and easy lemon chicken soup made in a crockpot.

Ingredients

  • 4 cups chicken broth
  • 1 pound boneless chicken breasts
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Place chicken, broth, carrots, celery, onion, garlic, thyme, and oregano in the crockpot.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
  3. About 30 minutes before serving, shred the chicken and return to the pot.
  4. Add lemon juice, lemon zest, salt, pepper, and parsley. Stir to combine.
  5. Serve hot and enjoy!

  • This soup can be customized with your favorite vegetables.
  • For extra creaminess, add a splash of heavy cream before serving.
