Crockpot Potato Soup

Delicious and creamy crockpot potato soup made with turkey bacon for a lighter twist on a classic comfort food.

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup turkey bacon, cooked and crumbled
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)
  • 2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. In a crockpot, combine the diced potatoes, chopped onion, chicken broth, garlic powder, salt, and black pepper.
  2. Cover and cook on low for 6-8 hours, or until the potatoes are tender.
  3. Stir in the milk and cooked turkey bacon in the last 30 minutes of cooking.
  4. If desired, mash some of the potatoes for a creamier texture.
  5. Serve hot, garnished with shredded cheese and chives.

Notes

  • For a richer flavor, add a splash of heavy cream in the last 10 minutes.
