- 4 chicken thighs
- 2 cups long-grain rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1 teaspoon paprika
- 1 bay leaf
- 1 lime, juiced
- 2 tablespoons olive oil
- salt to taste
- black pepper to taste
- Heat olive oil in a large pot over medium heat. Add chicken thighs and brown on all sides.
- Remove chicken and set aside. In the same pot, add onion, garlic, and bell peppers, cooking until softened.
- Add diced tomatoes, chicken broth, cumin, oregano, paprika, and bay leaf. Stir to combine.
- Add rice and return chicken to the pot, ensuring it’s submerged in the liquid.
- Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
- Remove bay leaf, stir in lime juice, and season with salt and pepper before serving.
