  • 4 chicken thighs
  • 2 cups long-grain rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups chicken broth
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 bay leaf
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken thighs and brown on all sides.
  2. Remove chicken and set aside. In the same pot, add onion, garlic, and bell peppers, cooking until softened.
  3. Add diced tomatoes, chicken broth, cumin, oregano, paprika, and bay leaf. Stir to combine.
  4. Add rice and return chicken to the pot, ensuring it’s submerged in the liquid.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes until rice is cooked.
  6. Remove bay leaf, stir in lime juice, and season with salt and pepper before serving.

Notes

  • For added flavor, marinate the chicken in a mixture of lime juice, garlic, and spices overnight.
  • Garnish with fresh cilantro before serving for a touch of freshness.
