- 2 cups long-grain rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 can diced tomatoes

- 1 teaspoon paprika

- In a large pot, heat the olive oil over medium heat. Add the onion and bell pepper, cooking until softened.

- Stir in the chicken thighs and brown on all sides.
- Add the rice, broth, tomatoes, cumin, paprika, salt, and pepper. Bring to a boil.

- Remove from heat and let it sit, covered, for 5 minutes before serving.
