Cuban Chicken and Rice

  • 4 chicken thighs
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt to taste
  • pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and bell pepper, cooking until softened.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the chicken thighs and brown on all sides.
  4. Add the rice, broth, tomatoes, cumin, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 25 minutes or until the rice is cooked.
  6. Remove from heat and let it sit, covered, for 5 minutes before serving.

Notes

  • For added flavor, marinate the chicken in spices for a few hours before cooking.
