Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fill a muffin tin with batter and bake for 18-20 minutes.
  6. Let muffins cool before serving.

Notes

  • For added flavor, sprinkle some cinnamon sugar on top before baking.
