Dump and Go Crockpot Rump Roast with Root Vegetables

A simple and comforting recipe for a delicious rump roast cooked with root vegetables in your crockpot.

Ingredients

  • 3 pounds rump roast
  • 4 carrots peeled and chopped
  • 4 potatoes peeled and chopped
  • 1 onion chopped
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. In the crockpot, layer the chopped vegetables at the bottom.
  2. Season the rump roast with salt and pepper, then place it on top of the vegetables.
  3. In a small bowl, mix together the olive oil, garlic, and beef broth. Pour this mixture over the roast and vegetables.
  4. Cover the crockpot and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, shred the roast and mix it with the vegetables before serving.

Notes

  • For a richer flavor, sear the roast in a pan before adding it to the crockpot.
  • You can add other root vegetables like parsnips or turnips for variation.
