Dump and Go Crockpot Vegan Butternut Squash Soup

A simple and delicious vegan soup made in a crockpot using butternut squash and other wholesome ingredients.

Ingredients

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon nutmeg
  • 1 can (15 ounces) coconut milk

Instructions

  1. Peel and chop the butternut squash into small pieces.
  2. In the crockpot, combine the butternut squash, olive oil, onion, garlic, vegetable broth, salt, pepper, cumin, and nutmeg.
  3. Stir well to mix all the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, add the coconut milk and blend until smooth.
  6. Serve warm and enjoy!

  • Adjust the seasoning according to your taste.
