Easy Baked Potato Soup

This easy baked potato soup is the ultimate comfort food, combining the rich flavors of potatoes and turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup green onions, for garnish

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. Add chopped onion and garlic to the pot and sauté until softened.
  3. Add diced potatoes and chicken broth to the pot, and bring to a boil.
  4. Reduce heat and let simmer until potatoes are tender.
  5. Using a potato masher, mash some of the potatoes for a creamy texture.
  6. Stir in the heavy cream, salt, pepper, and paprika.
  7. Serve hot, topped with crumbled turkey bacon and green onions.
