  • 1 can enchilada sauce
  • 1 cup black beans, drained
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, enchilada sauce, black beans, corn, and spices.
  3. Transfer the mixture to a greased baking dish.
  4. Top with shredded cheese.
