Easy Chicken Enchiladas

A quick and flavorful recipe for easy chicken enchiladas.

  • 2 cups cooked, shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with cumin, chili powder, and half of the enchilada sauce.
  3. Place a portion of the chicken mixture into each tortilla, roll it up, and place it seam-side down in a baking dish.
  4. Pour remaining enchilada sauce on top and sprinkle with cheese.
  5. Bake for 20 minutes or until cheese is bubbly.

Notes

  • Garnish with fresh cilantro and sour cream before serving.
  • You can use store-bought rotisserie chicken for convenience.
