- 1 pound boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 4 cups chicken broth
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 tablespoon olive oil
- 1 cup shredded cheese (optional)
- 1 cup sour cream (optional)
- In a large pot, heat olive oil over medium heat. Add onions and bell peppers, sauté until soft.
- Add the chicken breasts, taco seasoning, diced tomatoes, black beans, corn, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Remove the chicken, shred it, and return it to the pot.
