Easy Chicken Taco Soup

A comforting and delicious recipe for chicken taco soup that’s perfect for any day of the week.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup diced onion
  • 1 jalapeño, seeded and diced
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, heat some oil and sauté the onion, jalapeño, and garlic until soft.
  2. Add the chicken breasts and cook until browned.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Serve hot, garnished with your favorite toppings.
