- 1 pound chicken breast, cooked and shredded
- 4 slices turkey bacon, chopped
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 4 cups chicken broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeño, chopped (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup tortilla strips, for topping
- In a large pot, cook the turkey bacon over medium heat until crispy.
- Add chopped onion and garlic, cooking until translucent.
- Stir in the shredded chicken, diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 20 minutes.
- Serve hot, topped with tortilla strips.
