Easy Chicken Tortilla Soup

  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, chopped
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, chopped (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup tortilla strips, for topping

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add chopped onion and garlic, cooking until translucent.
  3. Stir in the shredded chicken, diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Serve hot, topped with tortilla strips.

Notes

  • For extra flavor, add lime juice just before serving.
  • Adjust spiciness by including or excluding jalapeño.
